I love vegetables in all forms. Steamed, raw, baked, naked and smothered in vegan mushroom gravy. I also love a huge heaping glass of fresh vegetable juice. Nothing makes my body light up with energy like the easy healing from concentrated vitamins, enzymes and phytonutrients!
While having a juicer is necessary to make this recipe, you might consider finally buying one! I’ve had my Juiceman Jr.($85) for 8 years and it shows no signs of slowing. We make fresh “green juices” at least a few times a week. I often make a double batch and stir in a teaspoon of vitamin C powder to the half I won’t drink fresh. The vitamin C protects the stored juice (kept in an air-tight glass container, of course) from losing it’s potency. This way I can have fresh, powerful juice for a couple of days and save time.
Here’s my current favorite juice recipe:
5 big leaves of kale
2 stalks celery
1 small or 1/2 of a large cucumber (peeled if you can’t find it unwaxed)
1-2 apples (Honeycrisp are my absolute favorite)
1 lemon, yellow rind cut away, but as much as the white pith still in tact, as this is where the majority of the bioflavonoids hang out
Just wait – you will love this!

I’ve always felt torn about the benefits of juicing. I can’t help but think I’d be better off eating the whole veggie/fruit and getting the fiber, even though I’ve heard that there is no way we could eat enough whole veggies/fruits to get the equivalent nutritional benefit… You’ve inspired me to look into it again. This sounds good. i like all the specific details like peeling cucumbers if they are waxed and organic red peppers. And with knowing that a Juiceman Jr. is only $85 i will consider buying a juicer.

Juicing is a great way to heal the body also.
I juice all the time. My Juiceman Jr is the travel juicer. I have a Omega and Kenmore at home.
My favorite basic juice is carrot and celery.

Usually make a couple quarts at a time and keep in mason jars. I always take a quart to work with me.

I love the Jack juicer! I have a question is the Peal of the Pina ok to drink? What benefits would you think that it may bring? I have been told conflicting info so I wanted to ask you. I also don’t know but I always suggest washing it before juicing it. Alex Forsythe
I have been juicing for two months now and my inflammation and aches from arthritis has gone down considerably! I also have so much more energy and sleep wonderfully now!

I actually bought the HealthMaster juicer after watching an infomercial (gasp) with Montel Williams (hey, he sold me!). Love it so far. I’m going to try this recipe – and adding fruit to the kale is probably what I need to do. Our last effort with kale ended up a little bitter (no fruit in there).

Does adding the vitamin c keep it from oxidizing? I have only been juicing a short time. Also a new vegetarian. You all are such an inspiration to me.
Yes! The vitamin C keeps it from oxidizing. It allows you to make juice in the morning and take it to work with you without losing as many antioxidants naturally found in the juice. Be well, Alexandra
